My battery drains linearly (mathematically linear) at random times, from 100 to 0. They have happened frequently in the past. I was able to catch it right before it hit zero today. Here is my Activity Monitor.
Of course, the process that drained my battery is not running, so it is not showing up. Is there a way for me to check what process/application caused this drain?

The Energy tab only targets applications (and certain background processes such as that photolibraryd in your screenshot). It doesn't give the full picture.
Check the CPU tab instead. It's a little more cryptic since it shows lower-level process names rather than applications, but it might provide more insight.
A longer shot would be a problem with the battery itself not being able to hold a charge, but the intermittent nature of this problem kind of discounts that theory. It may be worth checking System Settings -> Battery -> Battery Health to see if the OS sees any problem with the battery itself.

This sounds like the system isn't sleeping while in your backpack. Is that deliberate?
If the laptop is enclosed in the backpack and still running, then it's going to generate heat that isn't getting dissipated into the air (because it's in an enclosed space), which is going to cause the fans to speed up, affecting battery life.
Are you putting your system to sleep before you put it in your backpack?

The battery health says "Normal".
Also, I did open the CPU tab each time, but there are no processes that use significant CPU.
