In System Settings->Appearance, change the Theme from Pink to what you prefer:
In addition to adding a tag to your folder, you have to have "Tint folders based on tags" turned ON is Finder settings:
I don't think that you can assign colors to custom tags.
To give it some color you have to use one of the built-in ones.
THIS HELPED TKS! Finally able to get white folder. The THEME was on PINK instead of mulitcolor I think, as you said, was problem.
To me, that link for info shows "tags" and when I pick dot/color it just ads a colored dot next to title below folder icon, it doesn't change folder colors, so what am I doing wrong? Just after updating to Tahoe, all my desktop folders are PINK! I think they were grey before and want that back, but can't do it. Please explain.

is the solution for restoring your folders to the default color.
I tried to make a tag with "clear" for say a white, or clear with outline, but when I chose it, it still reverts to purple color. How to change to clear or white?
Doesn't seem to work, want either white or clear with border line...
yes, that is ON
I did that "choose color" then "color picker" and think I had to hover over white space on a window(?) I forget. But I have white now.
