Apple Pay is not involved here. Apple Cash can used to transfer money only between other Apple users. You would be better off using another system like Venmo, Zelle, or PayPal that are cross platform.
Apple Pay is a payment service that needs to be setup with a credit card processor such as Square. Then you can setup tap to pay on the Square app and clients can tap a credit or debit card or iPhone to pay you.
Apple Cash payments (transfers) is a person to person transfer service that allows two people to transfer funds from one party to the other. Commercial use of Apple Cash is prohibited per the Apple Cash terms and conditions.

The caveat is the commercial use of the account. Commercial use can be a big issue further down the line if it results in account be closed or locked. Best practice is to use an account specifically designed for businesses, such as the Venmo business account. You can still accept payments on your iPhone.
