Unless you have a huge number of apps you may not find that offloading apps saves all that much space when compared to the data space they use. You can delete that data but then if you ever want it again you have to make a backup first. I had an app that itself was taking up 0.25 GB of storage but its data files were taking up 35GB.

Press on them until a on screen menu appears and select Remove App and if a second menu appears select Delete App.
Just a warning that some apps might not be available after you update to iOS 26. You should go to the app store to make sure that they will.
