My ipad pro 2025 locks the screen when I lay it down, what can I do?

Your iPad will, by design, automatically lock when unused for a configurable period of time. The period before the iPad will automatically lock, for your security, is determined by the Auto-Lock setting:
Settings > Display & Brightness > Auto Lock > select as required
Selecting Never from the available settings is inadvisable - as your iPad (and all your personal and sensitive data) will be accessible to anyone that has physical access to your iPad.
As your iPad Pro has FaceID, in addition to settings an appropriate Autio-Lock period, consider enabling the Attention Aware feature...
Settings > FaceID & Passcode > Attention-Aware Features - set to ON
When set to ON - the iPad will sense your attention - and prevent the iPad screen from automatically dimming, or locking the display - while you are actively looking directly at the screen.
