MacBook Pro 14″, macOS 26.1
You cannot delete most of the apps that come with macOS. This includes the Chess app - and, I would assume, the Games app that Apple introduced with Tahoe. (I am not running Tahoe yet.)
These apps live on a portion of the system that contains files that Apple thinks will normally be read-only .. a portion that it has hardened against malware attack. If you could figure out a way to delete those apps, that would look like malware tampering and the system would refuse to start up.

Create a Configuration Profile:
If you do not want to use Games, then you can hide it using a Confiruation Profile:
