The ONLY way you can move your data to a new phone is if you have your data backed up to either iCloud or your computer. After a phone breaks, it's too late to restore the data on the phone. So, were you backing up your phone before it was broken? If no, you'll have to set up your new phone without being to transfer the data from the broken phone and HOPE that you were at least syncing your photos, notes and messages with iCloud. If you were and you set up the new phone using the same Apple Account as you used on the old phone, any data you synced with iCloud will download to your new phone.
Remember, backups MUST happen before catastrophe strikes.

And just how would you suggest they do that if the phone is broken? I can tell you how. They CAN'T.
Whether or not it has a SIM tray is irrelevant. No data is stored on the SIM.
If the phone no longer functions, you can't transfer anything from it.
You can re-sync your data from the cloud and restore your last backup to your new phone. Anything that wasn't already backed up or synced to the cloud is gone.
