Is there an audible command I can use to stop an emergency call after I fall? I know how to stop it with my finger on the watch face, but if I'm wearing multiple layers (eg while skiing), it takes a long time to get to the watch.

Not as far as I know. The only way to cancel it if triggered is physically tapping the Cancel button on-screen.
You could disable it entirely if you wish, though that may not be an ideal solution: Use Crash Detection on Apple Watch - Apple Support

Thank for responding. I contacted Apple support and they weren't able to offer a solution either. Oh well...
