The attachment icon ion mail has disappeared and no matter what I do, it doesn't re-appear. My mail accounts are pop...so I'm guessing this "change" has been only done for the benefit of imap accounts....so does this mean I have change my email accounts to imap. I need to be able to see attachments, otherwise there's a danger of missing important docs...this is a real, uncalled for pain, apple.

Yes but...normally when you get an email is show the paper clip in the lefthand menu...now it doesn't....
Are you on a Mac or on a iPhone or iPad?
The paperclip is on a Mac and a icon (see screenshot below) is on a iPad or iPhone.

All I can suggest is you look for the Customize Toolbar and see if it's in there.
I'm running Tahoe so I don't think that Mail in Sequoia is much different. Check under View
