First of all, note that an iPod can only be synchronised with one iTunes library at a time. Therefore, if you try to sync it with a second library, you will see a warning that all the media added to it from the first library will be deleted from the iPod and replaced by what is in the new library. Do not ignore the warning. So you need to ensure that all the media (music etc.) in your old library is in the new library before sync. If you need help with that, please ask.

Next, to sync the iPod with this second (replacement) library, you need to set the sync settings on the Mac. That's done when the iPod is connected to the Mac (and iTunes or Finder). There may be additional steps to perform since the iPod is now being synchronised with a Mac rather than Windows.
