My 2017 iMac running Catalina 10.15.7 is showing 2 hard drive icons with the same name. One seems to be a mirror? Is there a way to remove one of the icons?

Try booting in Safe Mode. Restart and hold down the Shift key until you see the login screen. Login and you should see Safe Mode in the menu bar. Do you still see the duplicates? To exit Safe Mode, simply shutdown and boot normally.
