No. Downgrading isn't supported.

Now if you would've told us what about the update you dislike, we may have been able to help. For example, Liquid Glass a primary component of this update, has options to turn the effect down.

• Settings > Display and Brightness > Liquid Glass > Set it to Tinted.
• Settings > Accessibility > Display and Text Size > Turn on Reduce Transparency and Increase Contrast. Also turn on Show Borders.
• And if you'd like to reduce the animation effects, go to the Motion page of Accessibility and turn on Reduce Motion.
