if you are trying keep your new number confidential, don’t text an untrusted recipient with it.
If you are nit looking to keep the number secret, and did transfer your cellular plan, then your new phone usually has the same number as the outgoing phone had. No changes. This when the carrier plan — not the data — is transferred. (As correctly mentioned in the earlier reply, the number is tied to the SIM or eSIM, not to the data.)
If you did intentionally change numbers, then you’ll also want to adjust the numbers associated with FaceTime and Messages, to. Add or remove your phone number in Messages or FaceTime - Apple Support
The recipient will see the number used by the phone sending the message. The SIM card is the key here.
