Should I update the IPad OS on my IPad Pro? It’s currently on 18.6.2 and I have 3 options. I could either keep it on the current IPad OS and not update, I could update to 18.7.3, or I could jump to IPad OS 26.2. I need help making the decisions.

Definitely update at least to 18.7.3 if it is offered for the security updates. But you may not have a choice; if you update at all it will go to 26.2.
I highly recommend you update your software to the latest version
As suggested by both Niel and Lawrence Finch, you really should update to one of the two available current versions of iPadOS - as both incorporate essential security updates for your iPad.
However, be aware that as your iPad is capable of running iPadOS 26, it is only a matter of time before iPadOS 18.x will cease to be available for your iPad - the only updates then being for for the latest full version of iPadOS 26. As such, there is limited if any benefit in remaining with iPadOS 18.x.
You shouldn't leave it on its current version unless you're using software incompatible with newer ones or you're part of a business or school which says otherwise.
Click here or try a display unit at a retail store to decide if you like the Liquid Glass interface; if not, update to 18.7.3.

Who knows how long until Apple removes the iPadOS 18.7.3 option for iPads capable of running iPadOS 26?
