It doesn't really matter what iPhone version you have or which iOS version you want. Apple typically only gives you one choice, or none at all.

There are different ways to ensure the highest iOS that your device will support is installed on your device. When updating, your device will update to the highest version currently available that it will support, or it will just say it is up to date (and can't go any higher) and won't install anything. If you want to run a higher system version than your current device is capable of running, you need to buy a newer device.

You can’t. Apple isn’t offering iOS 18.7.3 for any iPhone capable of running iOS 26. Even those of us who held our phones back on iOS 18, and updated to iOS 18.7.2 when it came out, can’t get iOS 18.7.3.
