Apple Watch Ultra 3 is not recording open water swim metres. My new Ultra was replaced and the replacement Ultra 3 does not record open water swim metres either. I feel this must be a settings issue and may be related to the new satellite operation on this watch? I have spoken with Apple a few times now and nothing works. Anyone have a similar experience?

Just to be sure I understand the issue correctly, this is your second Ultra 3 and the first one did also not record the Open Water Swimming workout?
Can you record other default Outdoor workouts, like running, walking or hiking without problems?
If you start the swim, does the watch log your start and finish position?
The watch has to be above water almost each stroke for a short time, to be able to log the GPS signal.
No GPS signal will show you an estimated route, like the grey dots in this screenshot, recorded with my Ultra 2.
