I have a Mac Studio (2025 version) with two displays at 2560x1440 resolution but after installing Sequoia the second display will only show as low resolution. any assistance would be appreciated

What make and model are the 27" displays..?
It sounds like you have a low grade USB-C to DisplayPort cable and need to upgrade that cable
or... switch and use a USB-C to HDMI adapter/cable connection out to that display.
I would test one of the following options out to that display.
a short 1m high speed USB-C to DisplayPort cable.
a USB-C to HDMI adapter and short HDMI cable.
a short 1m high speed USB-C to HDMI cable.

The main 27” display is connected by HDMI and works successfully, the second display also 27” is connected from the USB C port on the Mac Studio to the display port but repeatedly the resolution is low.
Only occasionally I can get a 2560 resolution if I keep taking the display port connector out, although this fix is not consistent.
That's not enough information to go on. What are the displays, and how are they connected?
