i can select favorites but both pins and favorites appear to ONLY be available when you begin the route and choose a destination. add stop requires me to enter an address or tapping on the map. history displays in recents. just to make things more confusing pins are also displayed as places and favorites are displayed under "guides". and why can't routes be saved? unbelievably lousy interface.

Pinned are ones you select. Favorites are locations that the app selects based on your history.
If you plot a route with stops I THINK you can pin it. Please try and let us know if it works.
In general, routes aren’t saved because for a given destination there can be multiple routes, and Apple Maps picks the best one for the traffic conditions at the time will be using it. Even for short trips of a few miles it chooses different routes because of traffic jams, or blockages due to crashes or construction. The app has access to real time known problems because traffic departments post problems, and also by monitoring the speed of other users of the app. And it worked wonders for me on a recent 400 mile trip, and changed the route as conditions changed.
if i click on the + it will take me to
where i can click on a recently viewed or enter a location and it will add it to favorites in my guide. i've never seen anything automatically added to favorites, only recently viewed.
as far as routing goes, i've been regularly doing 630 miles between massachusetts and virginia and if i just plug in the endpoints it always sends me through nyc. do that once and unless you're a masochist that will probably be the last time. so i put in stops to route me around nyc but it would be nice if they had waypoints so as to always show the estimated destination arrival time. if i could save the route i wouldn't have to reenter it every time i make the trip. add the return trip and that means i have to do it twice.
the travel times are way to low. i've seen average speeds of 70 mph calculated from the apps time and distance data. good luck with that; maybe out west but not 630 miles on basically I-95. my car gets around 500 miles on a full tank so that's only one gas stop, then throw in a couple of bathroom/food/stretching breaks, and as i pretty much drive the speed limits i'm never going to make their estimates. reasonable average mph based on my experience is 55-60 mph.
so you night ask why do i use it. 1) it's the only app i've seen that even has stops that i can use as waypoints. 2) the advance notices of trouble ahead or an exit i have to take, some from the left lane, is invaluable to stay on course. and 3) i agree with you 100% about on-the-fly rerouting to avoid an unanticipated problem.
