You clearly have no understanding of how USB PD charging operates. A healthy device that supports USB PD charging, such as Mac, will only draw the power that it needs to charge.
The same applies for devices that are capapable of fast-charging; the device will only draw the power that it requires from the connected supply - and no more. It matters not one jot if the Power Adapter is rated at 60W, 100W or more.
Your iPad or iPhone will suffer no ill effects whatsoever for being connected to a compatible USB-C Power Adapter that supports USB PD (Power Delivery), regardless of the potential Power Output of a high-power supply.
