In the iPhone Health app. The Vitals plots also list what the vitals categories are themselves and you can look up what your average (or "typical") values actually are in each of those respective categories in the Health app.
I think there is also a Vitals app or section within the Watch but I don't use that, I use the iPhone Health app.
