How do I save and create new medical info files in Notes on iPad 10th gen?

So I purchased a medical info off of ETSY and the rep from apple call centre helpped me to put it under notes. I see it under notes on I pad 10 Gen and A17 but dont know how to save the work thanks once saved I dont know how to do another one if a new case comes up. Please help thanks also is there away to typ the info rither then pencill?
