Cannot change photo layout after iOS 26 update

I don't understand what you mean. What is it that you want? Are you talking about the Library view, or an album view, or other collections? Are you wanting the pictures sorted in a different order?

Do you see a little funnel like shape at the top?

Tapping on this will bring up a menu

That will let you sort your pictures by date added or by date captured. Filter will let you choose to exclude some pictures from view, so you see only your favorites or only the videos or a combination of things. The View Options give you more choices.
