Yes. There is a very wide range of third-party monitors that work with the M4 and M4 Pro Mac minis. Both of the Mac minis in question "simultaneously support up to three displays".

Looking on the CRUA site, I could not find a monitor that matches your description. The closest match was the CRUA 27 Inch Gaming Monitor, UHD(3840 * 2160P) 144Hz Built-in Speaker, White . There seems to be a CRUA model with the resolutions and refresh rates that you describe on Amazon .
If that is the monitor that you are asking about, it has
- Two HDMI v2.1 ports
- Two DisplayPort v1.4 ports
The M4 Mac mini supports DisplayPort v1.4, and the M4 Pro Mac mini supports DisplayPort v2.1. My guess would be that you could connect the monitor via USB-C to DisplayPort – but that the 4K refresh rate would be capped at 60 Hz. (Not that this would be the end of the world.)
If you connected this monitor using a HDMI to HDMI cable rated to support the latest version of HDMI, I think that you could get 4K @ 160 Hz. This would reduce the total number of monitors that you could use from three to two.
Going by Apple's Technical Specifications, even if you use a HDMI v2.1 connection, 240 Hz is the maximum refresh rate supported. So you won't be running the monitor in FHD mode at 320 Hz.
