We have an Apple TV MN873LL/A connected to a Samsung tv. When watching Hulu it regularly shuts down and goes to the Apple TV Home Screen, often at the most inopportune time.
Is it the device? Hulu? TV?

It is a bug with the Hulu app on Apple TV, there is another thread already started about this issue. The best hope would be for all users to continue to reach out to Hulu and get them to acknowledge it so that they can investigate and issue an update.
First thing I would suggest is going into Settings > Remotes and Devices > Remote App and Devices and removing any device you don't recognize or haven't used in a while. Is there any other context you could also provide, like:
