Hi Keith,
welcome to this Apple (user-to-user) community!
Re: "AirPods Pro 3 touch controls not working"
There are various possible causes for the issues you experience.
Wondering just what suggestions you have tried via online searches that haven't worked for you.
Eg: You may have looked at Apple Support's "how to" articles, tips, user guides, etc., or just third-party searches
We have no way of knowing, and would rather not suggest things you already know don't work for you
See how to: Change settings for AirPods or AirPods Pro - Apple Support
You may want to check whether or not your AirPods have updated automatically to the newest firmware version:
(Paired device also needs to have the newest OS version installed for firmware to update automatically)

If you haven't already seen the linked article below:
You may want to find out more precisely how the AirPods themselves are set up to work::
Pause, skip, and adjust volume with your AirPods and AirPods Pro - Apple Support
As AirPods are paired with an iPhone::
Go to Settings > Sounds (or Settings > Sounds & Haptics)
You can try dragging the Ringtone and Alerts slider back and forth a few times, (maybe set it near the middle).

Re: "On incoming calls squeezing to answer does nothing and I must answer using voice control."
Wondering in what way you have set-up and customized the AirPods to suit yourself
Eg: You can have Siri announce calls and notifications for specific apps

Eg: says:
You can also route and automatically answer calls or have Siri announce and answer calls.

Perhaps the linked article below can help:

Re: "I've had them a week now", Are they defective?
We are all Apple users, like yourself in the community, and restricted to knowing only what you've told us.
If you are expert in the use and control of AirPods, maybe it is worth checking with Apple.while they are new.
If you are still getting familiar with the use of the AirPods, maybe learn more about controlling their features,
and see whether your experience with them helps solve the issues you have.
