I'm not clear as to exactly what you wish to do. One possibility is to turn off purchase sharing. The family group still exists but everybody can use their own payment method.

"If you're the family organizer and you don't want to pay for family members' purchases and subscriptions, you can turn off Purchase Sharing [ How to share apps and purchases with Family Sharing - Apple Support ]. When Purchase Sharing is turned off, everyone must use their own payment method. When Purchase Sharing is turned off, family members can share subscriptions, but they can't share individual purchases like apps or books."

Another possibility is you wish to disband the family group entirely, or remove individuals. Here are shortcuts to various scenarios:

- How to remove anyone 13 or over if you are the Organizer. --> How to leave or remove a member from a Family Sharing group - Apple Support

- Disband a family group --> How to leave or remove a member from a Family Sharing group - Apple Support

You can't remove a child (age varies by location but often under 13) from Family Sharing. You can either:

Move a child to another group using Family Sharing as outlined in this document: How to transfer a child to another Family Sharing group - Apple Support

or:

Delete their Apple ID account entirely. Doing this means the child will no longer be able to re-download past purchases.
