Set default email account in Apple Mail on OS Tahoe

In Apple Mail in OS Tahoe, how do I select my default email account. i.e. of the several email addresses I have with different organisations, how do I identify the one which my new outgoing emails defaults to?

Go to the Mail Menu at the top, click on Settings ➜ Composing ➜ Addressing ➜ Send new Messages From and choose one of the accounts in the dropdown to be the default account to start new emails from.


You can change this at any time, and you can select a different address if required in the From line while composing the new email.
