I love my Apple and I love my Apple products but I can’t stand this new January 2026 Update.
What I loved about Apple was how quick and simple everything was but now they’ve made it more complicated and you have to go through extra steps to complete the same task.
Is there a way to go back to the old update?

Sorry to hear you don't like the new update.
Currently there is no way to degrade the update.
But if what you have downloaded is Beta version you can follow the steps mentioned in the below link to restore the device and bring it to the official version :

But make sure you turn off find my in the phone otherwise it will come to the Activation lock screen.

Also do take the back up otherwise you will lose all the data.
