How to ensure Apple Watch fitness tracking starts with the new update?

Feedback new update on Apple Watch often does not start fitness when tapping the new update version (not happy with the new update) prefer the previous version.

any tips on how to make sure this option works.

if you mean sometimes you need to tap the ➡️ button more than once, I thought that happened before.
