I have an IPhone 14 Plus. The photos in the gallery are organised by default from the oldest to the newest. I am trying to find in settings how to organise them from the newest to the oldest. I just find the default awkward and I can’t get used to it.

I'm not sure what you mean. When I open Photos in Library, I see the Newest first-- toward the bottom of the screen. Are you saying that you want to see the oldest pictures first? I'm pretty sure you can't do that in Library.
In an Album you can sort either way. Here, using the "funnel" filter menu
I've put the oldest pictures first
so it starts with tintypes from over 100 years ago. So you could select all your pictures and add them to an Album you've made. You would need to add new ones from time to time.
