Why did Apple get rid of the Epson Smart Panel app for my desktop?!? I’m livid!

Perhaps you care to elaborate? We cannot help without detailed information.
Epson Smart Panel... appears to be software from er... Epson. Maybe you need to reinstall it, provided that there is a version compatible with your OS. In any case, it is not that Apple got rid of anything. This is third party software, so you need to check with the provider.
Not being familiar with this, I just went and checked: apparently there is Epson Smart Panel for iPhone and iPad (as well as Android), not for Mac. Again, it is up to Epson to provide this, or not.
