I installed iOS 16.7.14 on my iPhone 8. Fitbit not working properly, might be more apps. Now I read the update wasn’t meant for iPhone 8, it shouldn’t have installed?? What’s going on?k

If I may add one more comment to Servant of Cat's good explanation ... It sounds like Fitbit may not have updated their app to work with the higher Apple iOS.
Try removing your Fitbit from your Apple account .. Delete the Fitbit app ... restart your iPhone ... then reinstall the Fitbit app.
If this does not help, contact Fitbit Support.
iOS 16.7.14 is for the iPhone 8, 8 Plus, and X. It replaces iOS 16.7.13, which Apple released on January 26, but which caused problems for some users. Apple pulled 16.7.13 after reports of those problems.
What both seem to be about is providing a new security certificate so that iMessage, FaceTime, etc. will keep working after January of next year.
