I need to update my iPhone 12 mini, still operating ios 17.7 but I'm wondering, is the current 26.2.1 update my only option, & if it is, should I expect any problems updating from 17.7 to 26.2.2? Or, is it even possible to get an intermediate update first? (like an ios 18 or..?)

At this point iOS 26 will be the only option. Apple is no longer offering any version of iOS 18 to devices that can run iOS 26.
In theory there should be no issues. In practice your mileage may vary.
Do note, the change from iOs 17 to 26 will be a more extreme one as iOs 26 does modify the user interface quite a but and many people dislike it. There are some options to reduce the annoyances some people report.
