Why 'options' to send an email?
Why are their options to send an email in the new operating system. I want the email to go when I click send, not be offered options. I have never needed to delay sending an email.

Can you not simply ignore them?
On an iPhone and iPad holding down the send arrow will offer options. But if you just tap the arrow without holding down it will just immediately send the email.
On Mac the options are on a completely separate drop down. You can just click on the large blue send arrow to immediately send the email and entirety ignore the send options.

On the Mac the large blue send button has no options. As I said the options are on a completely separate dropdown you can just ignore. You don't have to click on that at all.
On my Mac I liked one click to send. I don't need options because I never type an email to send tomorrow. Why would I? On my Mac there is no large blue send arrow. When I click on the send arrow I get the dropdown of options and have to choose and click on send immediately.
And, if you do not like the default placement of the Send button, you can command-drag it to a new spot on the toolbar:
