You cannot delete the Apple Watch app from an iPhone. The Watch app is a built-in (system) app in iOS, so Apple does not allow it to be removed — even if you no longer own an Apple Watch.
Since it cannot be deleted, you can remove it from view:
Option A – Remove from Home Screen
This moves it to the App Library only.
Option B – Move to App Library Folder
You can drag it into a less-used folder or leave it in App Library so it’s out of sight.

In most cases, you cannot permanently delete it, only remove it from Home Screen.
Make sure your old Apple Watch is removed from your Apple ID devices list.
I disagree, you can delete it in the usual way, tap and hold, tap Remove app, then tap delete app.
