I recently traded in an iphone 8, but forgot to remove the sim card. The 8’s data was transfered to the new phone, and was then factory reset. What information is on an iphone 8 sim card? Is there a security risk if someone accesses that data?
iPhones, any modern smartphone, don’t store anything on the SIM card.
All the SIM card does is have your cellular account information necessary to access the cellular network.

I have never removed the physical SIM card when upgrading.
You have nothing to worry about.
