Is the a way of inverting/mirroring this highlighter tool ? Right now it’s tilted left \ I want to tilt it right / to get different results.

The Apple Pencil highlighting tool is sensitive to the angle that you hold the Pencil relative to the iPad screen - such that the shallower the angle, the wider you will see the corresponding mark on the iPad screen. Left or right handed, you'll see the same behaviour - and will change the direction.
Consider using a traditional lead pencil to shade a sketch on paper. When the Pencil is perpendicular to the page, only the sharpened tip of the pencil makes contact with the paper - making a narrow line. If instead you hold the Pencil at shallow angle, you'll have the wide edge of the pencil lead in contact with the paper - producing a wider smudge.
The Apple Pencil is more versatile in that the relative angle controls the width - and is therefore infinitely variable between broad strokes and a narrow line.
