Thanks to all of you.
I'm using an iPad Air and Pages with the most current updates...
This is the MacBook Pro forum so I'll request the hosts move your post to the iPad forum.
and I don't see that Menu as shown above on "Finder"...I think that is just on an iMac computer? ...but thanks for trying! I do appreciate any help I can get.
There is no Finder on an iPad. There is a Files App only.
It's as if these features just 'disappeared'...so I'm thinking maybe Apple did an 'upgrade' and simply deleted these good options as they often do with 'upgrades'.
There was an actual 'SEARCH' button at the top of the page...not buried in a Menu as it now is...and also there was a "BACK and FORTH" arrow at the top of the page I could hit that would make the 'space' between paragraphs narrower or wider...that's now disappeared as well.
Features like the "Search" option can be found under the ... icon at the top right corner. It is labeled "Find".

Yes other features have been moved into a menu now. It's the new design of the new Pages App on iPad.
If you would like to see it changed back you can offer Apple Feedback.
Changes like these always take time to adjust to. But are common with major updates.
I thought I could just go to some Menu and "undo" something I might have done but now am thinking Apple did this on purpose with an "upgrade"...
Yes, this was a purposeful redesign for the newest Pages app. It's supposed to streamline the process of creating a document.
Now to do a "SEARCH" I'm having to hit the three dots at the top right on the page, then hit "search" and then after the page literally "jumps"...hit "search" a second time...then I can do a search. So all I really want is to get my SEARCH button back at the top of the page. This is depressing....
Sorry, but this is what it is now. You can offer Apple feedback and if enough people do, they may change it back.

This should not cause so much issue. Like with all changes it may just take a bit of time to get used to. It should not be actually depressing, just different.
