You can turn off the fall detection during those times when you don't want it active:
Settings app on Watch => go to SOS => turn off fall detection
OR:
Watch app on iPhone. Emergency SOS => turn off fall detection
My Watch also offers an option to have fall detection active ONLY during workouts. Which might also work for you.
I think turning off fall detection only during pickleball or tennis does not pose a risk because you have other people you are interacting with then and if you were to fall, they can call for help.
