Excellent news.
The iPad's text colouring is effectively controlled by the OS so as to provide contrast to the background wallpaper. As such, it is the selection of wallpaper colour (or background image) that determines the colour of text labels.
If you research colour theory, this being something well understood by successful graphic artists, you will learn about how some colour combinations do and don't work together - or may offer poor contrast or readability.
