Upgraded to latest version of iOS 26 on my iPadtoday, and all the description words that define what each app is, are now in black instead of white, which is annoying. Is it possible to change the wording back to white?

Excellent news.
The iPad's text colouring is effectively controlled by the OS so as to provide contrast to the background wallpaper. As such, it is the selection of wallpaper colour (or background image) that determines the colour of text labels.
If you research colour theory, this being something well understood by successful graphic artists, you will learn about how some colour combinations do and don't work together - or may offer poor contrast or readability.
Consider changing your background wallpaper to darker colour or image.
Might you have set something at Settings > Accessibility > Display & Text Size? Perhaps you are using Classic Invert, for example?
Consider trying Settings > General > Transfer or Reset iPad > Reset > Reset All Settings.
