Have you tried a force restart of your iPhone: Force restart iPhone, and then test the ampersand again.
Could you try using some Apple apps to verify that the problem also exists with them?

Does this happen only in Calendar? Or also in Safari, Mail, Notes, Messages, Pages?
As far as I can tell, it happens in every app I use … but none of the apps you've mentioned.
I use Chrome instead of Safari & Gmail instead of Mail. I'm not sure what the alternatives to Notes, Messages & Pages would be.
