How to bypass/activate TPM 2.0 on bootcamp 2019 MBP?
I would like to play games with anti-cheat, and upgrade to Windows 11, however I cannot for the life of my get around this TPM 2.0

It's not likely that the 2019 models have the required security on-processor as the 2020s do, but in either case, Apple doesn't make its security processors available to Windows, nor is the Intel equivalent turned on for Boot Camp. You'll need an installer with built-in overrides, and a PC app called Rufus will do this for you. It's not for those who get squeamish at the thought of hacking.
If Rufus detects a Windows 11 ISO to write onto a USB stick, it will write in the TPM bypass by default with others accounting for recommended specs. Bear in mind that neither Apple nor Microsoft supports Windows 11 on unsupported hardware. Windows 11 also came out during the x64 to ARM transition for Apple and was not released where Apple could test it sufficiently.
TL; DR: you're on your own, but good luck.

Macs don’t have a TPM, and Boot Camp doesn’t simulate one, which means no support for Windows 11.
A virtual machine might emulate a TPM, as an alternative.
This isn’t the best spot for Windows gaming and no-TPM Windows discussions, either.

There are many PC systems with no TPM, and many discussions of that topic.
Mac is but a rounding error in the number of PCs that went unsupported with Windows 11.
