You cannot. However, you can choose not to use it.
I've been using Macs for nearly 20 years and iPhone since they came out. There's never been an option to remove any of the standard Contacts fields. You can add custom-named items to existing fields which can be edited or deleted but the default fields can't be deleted.
As for it not being helpful - I don't see how it's not helpful to know how a person wants to be addressed.
You will find many things that are unable to be removed. There is no way to remove an individual emoji either, or a default Wallpaper to choose from, but the choice of what you want to use is up to you.
It has not been removed. You are not required to utilize that field, just like you are not required to use any of the other fields available in the contacts app.

Nope, not true! You can choose to create a custom field and edit/remove that one, but that has always been the case. No ability has been removed. You will also notice that any field you don't use will not show up when viewing that persons Contact.
You may be thinking of the Mac where there is the ability to create Templates for use with Contacts, but there was never a template feature for iPhone/iPad devices.
