Hi
My fathers Iphone has all his music/playlists on it - works perfect.
I cleared his Itunes on his PC and hoped to connect to USB to iphone and Sync
Itunes on the PC detects the Iphone and songs, when I click on the Music, the SYNC option is not there.
Any ideas

Sync is one way, from PC to iPhone you cannot sync in reverse from iPhone to PC.
You will need a 3rd party app that can extract the music from the iPhone, and recreate the iTunes Library on the PC.
