After the latest update on my iPad I intensely dislike the floating AI thing and I don’t want to see it. How do I get rid of it

What floating AI thing?
There is no persistent floating AI icon or thing anywhere with iPadOS 26.
If you call up Siri, by saying "Hey Siri" or holding down the sleep button, it will show up as a colored globe in the corner but will go away after a couple of seconds if you do nothing or just say "cancel"
Is that what you are referring to?
If this is not what are referring to, please clarify what you are seeing.

That has nothing to do with AI, as Alancito points out it's the hover text option.
