There is not much of a difference (if any) between the purchased and the subscription version of Pixelmator. The main difference is in all the addition content that you can get from the subscription.
You may also want to have a look at the new Affinity (now free, and that bundles all the old Affinity apps, particularly, as you mentioned Adobe Illustrator, the Affinity Designer). This new application is less intuitive and mac-like than Pixelmator, but very powerful (and you can't argue with free...).
