After the last iOS update, I am no longer able to watch YouTube on my phone longer than about 2 minutes. Also, Google Maps shuts off after a short time as well. Apple Maps seems

Your tag line suggests you have an iPhone 11. If that is the model you own, it was released in 2019, over 7 years ago. If you haven't replaced the battery in your phone in all these years, you most assuredly have a failing battery and your phone is shutting off the apps to protect itself from overheating or worse.
Open Settings > Battery > Battery Health - If it is at 80% or less, you need to either pay Apple to replace the battery in your phone or trade it in a get a new iPhone.
