It shouldn't take that long. Did you have a VPN on your previous phone? If yes, it could be preventing the download. VPN's aren't needed on iPhone at all. So if you had one, open Settings > General > VPN & Device Management and remove the VPN profile. Remove any VPN app. Then Force Restart your iPhone to get the download process going again --> https://support.apple.com/guide/iphone/force-restart-iphone-iph8903c3ee6/ios

Also, make sure your phone is plugged in to charge and you have a strong Wifi connection.

hard to say, how much data is being donwloaded/synced.

Are you connected to a strong wifi, connected to power source?
