You should try a forced restart of your phone:
Force restart iPhone - Apple Support
This is different from a simple Power Off. I had to continue holding the button down 5 or 10 seconds past the "slide to power off" message, and then I released the button only after the Apple Logo appeared indicating a re-start.
In iOS 26 on an iPhone 13 and later, HDR can't be turned off. In Photos you can turn off "View Full HDR." That may be what you mean by Gallery. There are a range of styles that can be added-- have you set that to Standard?
Have you tried Edit>Revert? This would tell us if the effect you see has been added to the original. How about if you look at the picture or its original on another device, or if you Share>Save to Files and look there?

Check the 'update status' in iPhone OS to see there might be one.

The inference to a non- PhoneOS is only matter of fact; not needed.
Suggesting the answer might be just check for update to iPhone OS.

Yes, I've turned off full HDR imaging in the gallery and I'm using standard photo mode. According to my research, many iPhone 13 Pro and other models complain about not being able to turn off HDR, and photos look very artificial because we can't disable it. It would be great if a feature to turn this off was added with new updates.

I think the idea is that the camera is supposed to be so smart that it knows when to use HDR and when not to. But I agree-- that's no reason to take away our control. You can leave comments for Apple here:

Perhaps there may be a newer artificial intelligence from Apple, included
within their newest iOS updates? While no one yet, has attempted reply.
A few translation models suggest the effects may be semi-automatic
& part of the last iOS26.x; in there, could be a further place of inquiry.
