This works fine on my end when I select March 17 in the "Ask for" action:

I've seen some shortcuts failing for languages other than English. So I switched my iPhone to Dutch (Nederland) and I was able to reproduce the problem:

Please let Apple know: Product Feedback. Choose the iPhone category as there is no Shortcuts app on that website. You could either write your submission in English or Dutch. You could reference this discussion to provide the Apple teams with an example.

Digging a little more, I found that the month of March seems to be the issue, especially its abbreviation "mrt" (in Dutch). Shortcuts doesn't have an issue with April or "apr" (in Dutch).

If I specify "Maart" instead of "mrt", the returned date is correct:

So as a workaround until Shortcuts is fixed, try to use the "Format Date" action to format the date using the month full name instead of its abbreviation, i.e. "maart" instead of "mrt", before saving it in your text file. Use the Long format for the date, and Short format for the time:
